TROPICAL BARBECUE MULLET

2 pounds fresh mullet fillets
Tropical Barbecue Sauce
Parsley

Thaw fish if frozen. Brush both sides of mullet fillets with Tropical Barbecue Sauce. Place fillets in a single layer in well-greased hinged, wire grills. Cook about 4 inches from moderately hot coals for 5 to 8 minutes. Baste with sauce. Turn, cook 5 to 8 minutes longer or until fish flakes easily when tested with a fork. Garnish with parsley. Makes 6 servings.

Tropical Barbecue Sauce
¼ cup molasses
¼ cup vinegar
2 tablespoons Worcestershire sauce
1 tablespoon prepared mustard
½ teaspoon liquid hot pepper sauce

Combine all ingredients. Makes approximately ½ cup sauce.
